At first April light, on the hills of Camporeale, wild fennel seedlings peek out among the limestone rocks. No forced sowing: it grows wild, where the earth and the sun decide.
From June, yellow umbels flood the slopes. This is when the plant concentrates all its essential oils — the sweet aroma that in two months will be in your jar.
In late August we head out before dawn, when the dew still holds the seeds on the plant. We cut by hand, one umbel at a time — it takes days to fill the baskets.
On wooden boards we spread the seeds to dry in the sun for a week. Then we pass them one by one: we discard the green, the damaged — keeping only those ripe to perfection.
